The weekend with our guest chef was a “win” in so many ways and we found ourselves with two new members of the Ski Lodge Engelberg family.
Christian and his assistant Ruben Blomdahl arrived on Tuesday evening and got settled in at the hotel before getting straight to work. No, of course that is not true. They actually enjoyed a night off and then went skiing the next day.
But THEN they really got to work. Our kitchen team was briefed with the menu earlier in the week so all of our staff could start creating the requested food directly – under supervision from Christian and Ruben that is. Both guests were hands on from the beginning and didn’t let anything go before it was in perfect condition for the menus.
As the weekend went on they were working a lot with our staff in the evenings and skiing during the days. A great deal of the hard work probably went on during the days: sore skiing muscles during dinner service were a new experience for both Ruben and Christian. A welcome one of sorts.
Our head chef John mentioned that Ruben was very happy with the setup and was surprised by how much preparatory work we had done in our kitchen so that they were able to relax during the days.
“We never arrived at a guest chef arrangement with everything so prepared” – Ruben Blomdahl.
Well, we never had so much leftover filet of beef and our guests at the skier’s dinner the next day were THRILLED! On behalf of our guests: THANK YOU Christian and Ruben, we had a blast, and so did our guests.
